Insuring a vehicle that is not registered

My father has been insuring a vehicle which I found out to be not registered for quite some time now ( few years) . Wouldn't the insurance company know of this and not insure my father unless truck is registered?

What do you mean by the vehicle is not registered? Do you mean your father's name does not appear on the registration certificate? Or are you talking about road tax?

If you're referring to the registration certificate (V5 form), then I assume that this vehicle was purchased second hand and it's upto the previous seller to update the registration documents so that DVLA is informed of the new owner. Otherwise the vehicle will still be registered under the previous owner's name and that is perfectly fine for insurance purposes.

Is the truck in question owned by your father? Did it have any previous owners or was your father the sole owner?
